Adega Saiñas Sinuoso is a beautifully expressive red wine from Ribeira Sacra in Galicia, made from MencÃa, one of north-west Spain’s most elegant and captivating grapes. This is not a heavy, obvious red. It is all about perfume, freshness, texture and that unmistakable Atlantic energy.
In the glass, it offers lifted aromas of wild berries, cherry, raspberry, pomegranate, violets and rose, with a darker mineral edge that brings depth and seriousness. There is a lovely tension between the bright red fruit and the more savoury, stony character of the wine, giving it real personality from the first sip.
MencÃa is at its best when it feels both delicate and intense, and Sinuoso captures that beautifully. The palate is fresh, precise and silky, with fine tannins, vibrant acidity and a cool, mineral finish. It has enough structure to feel refined and food-friendly, but it never becomes heavy or tiring.
This would be excellent with Ibérico ham, chorizo, grilled pork, roast chicken, mushrooms, lamb, hard cheeses or dishes with paprika, herbs and olive oil. It would also work beautifully slightly chilled, especially with charcuterÃa or conservas.
